I love potato salad and over the years, I've tried many recipes. My problem is I never keep them for long. I have always been on the look-out for the best possible potato salad recipe. I feel I found it. I've been making this recipe for a few years now and every time I make it for others, I get asked for my recipe.

Ingredients
- FOR THE SALAD
- 3 pounds potatoes, boiled and diced
- 1 cup celery, chopped
- 1/2 cup onion, chopped
- 4 - hard boiled eggs, chopped
- 2 - hard boiled eggs, sliced for garnished
- Handful - green olives, sliced for garnish
- FOR THE DRESSING
- 3 - eggs
- 1/2 cup sugar, more or less to your taste
- 1/2 cup cider vinegar
- 3 tablespoons whipping cream
- 2 teaspoons butter
- 1 teaspoon dry mustard
- Dash - salt and pepper
- 2 cups mayonnaise

Step 1FOR THE SALAD Mix all the salad ingredients except the garnish.

Step 2FOR THE DRESSING Over low heat, whisk eggs, sugar, vinegar, whipping cream, butter, dry mustard, salt and pepper. When the mixture reaches 160* or when, as I do, the mixture is thick enough to coat the back of a spoon, remove from heat.

Step 3Cool to room temperature. Fold in Mayonnaise. Pour over already mixed salad.
