This Potato Salad is very easy. It features green onions which pair very well with potatoes. It is clean tasting, slightly tart, with a peppery finish. The combination of sour cream and mayonnaise compliment each other and lend a real creaminess to the dish. This potato salad will go well with just about any grilled meat, chicken or fish. If you are serving fish, try adding a little fresh chopped dill to the mix. This recipe proves that some things are best done simply.

Ingredients

  • 10 medium russet potatoes, boiled in skins, cooled, peeled, rough dice
  • 1 bunch green onions (scallions), green parts only, chopped on the fine side
  • 1 teaspoon salt
  • 1 teaspoon cracked black pepper (coarse)
  • 1/4 cup apple cider vinegar
  • 1/3 cup sour cream
  • 1/2 cup mayonnaise

How To Make potato salad with green onions

  • Step 1
    Place all of the ingredients in a large mixing bowl. Toss/fold together gently until well mixed. Check salt. Add more if desired, but not too much.
  • Step 2
    Transfer salad to a medium sized serving bowl. Cover with plastic and chill in fridge for at least 1 hour before serving.
