- 10 medium russet potatoes, boiled in skins, cooled, peeled, rough dice
- 1 bunch green onions (scallions), green parts only, chopped on the fine side
- 1 teaspoon salt
- 1 teaspoon cracked black pepper (coarse)
- 1/4 cup apple cider vinegar
- 1/3 cup sour cream
- 1/2 cup mayonnaise

Step 1Place all of the ingredients in a large mixing bowl. Toss/fold together gently until well mixed. Check salt. Add more if desired, but not too much.

Step 2Transfer salad to a medium sized serving bowl. Cover with plastic and chill in fridge for at least 1 hour before serving.
