Potato Salad with Green Onions

10 mediumrusset potatoes, boiled in skins, cooled, peeled, rough dice
1 bunchgreen onions (scallions), green parts only, chopped on the fine side
1 tspcracked black pepper (coarse)
1/4 capple cider vinegar
1/3 csour cream
How to Make Potato Salad with Green Onions
- Place all of the ingredients in a large mixing bowl. Toss/fold together gently until well mixed. Check salt. Add more if desired, but not too much.
- Transfer salad to a medium sized serving bowl. Cover with plastic and chill in fridge for at least 1 hour before serving.
