Ingredients
- 2 pounds yukon gold potatoes, cut into 2" pieces
- 4 green onions, diced
- 1/2 cup sweet onions, chopped finely
- 5 hard boiled eggs, peeled and chopped
- 2 medium avocadoes, chopped
- 4 slices bacon, finely chopped and cooked
- salt and pepper to taste
- 3/4 cup mayonnaise, reg or lite
- 1/3 cup sour cream, reg or lite
- 1 tablespoon white wine vinegar
- 1 tablespoon dijon mustard
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
How To Make potato salad with avocado

Step 1Boil potatoes in large pot until fork is easily inserted in potatoes. Do not overcook. Drain liquid.

Step 2Add green onions, sweet onions, eggs, bacon to potatoes. Mix up ingredients.

Step 3Mix up sauce ingredients from mayonnaise to paprika. Add to potato mixture. Add salt and pepper to taste. Chill in refrigerator until almost ready to serve.

Step 4Add chopped avocado and serve.
