potato salad with avocado

I have been adding bacon to my potato salad for a while but avocado is something totally new.

Ingredients

  • 2 pounds yukon gold potatoes, cut into 2" pieces
  • 4 green onions, diced
  • 1/2 cup sweet onions, chopped finely
  • 5 hard boiled eggs, peeled and chopped
  • 2 medium avocadoes, chopped
  • 4 slices bacon, finely chopped and cooked
  • salt and pepper to taste
  • 3/4 cup mayonnaise, reg or lite
  • 1/3 cup sour cream, reg or lite
  • 1 tablespoon white wine vinegar
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika

How To Make potato salad with avocado

  • Step 1
    Boil potatoes in large pot until fork is easily inserted in potatoes. Do not overcook. Drain liquid.
  • Step 2
    Add green onions, sweet onions, eggs, bacon to potatoes. Mix up ingredients.
  • Step 3
    Mix up sauce ingredients from mayonnaise to paprika. Add to potato mixture. Add salt and pepper to taste. Chill in refrigerator until almost ready to serve.
  • Step 4
    Add chopped avocado and serve.
