This is how I learned, & have always made potato salad.

Ingredients

  • 6-8 medium russet potatoes, skinned, cubed & boiled
  • 1/4 cup diced onion
  • 4 - eggs, boiled, peeled, & chopped
  • 2 tablespoons sweet pickle relish
  • 1 cup miracle whip, light
  • 1 cup mayo, low fat
  • 1 1/2 tablespoons bold & spicy mustard
  • 1 - roasted red bell, chopped (or pimento)
  • 1 teaspoon black pepper

How To Make potato salad

  • Step 1
    Boil the potatoes till tender, & drain. Boil the eggs, cool & peel. Mash the potatoes adding a very small amount of milk. Chop the eggs and red bell.
  • Step 2
    In a large bowl mix together all ingredients together. Refrigerate. (Add more miracle whip or mayo if desired).
