This is how I learned, & have always made potato salad.

  • 6-8 medium
    russet potatoes, skinned, cubed & boiled
  • 1/4 c
    diced onion
  • 4
    eggs, boiled, peeled, & chopped
  • 2 Tbsp
    sweet pickle relish
  • 1 c
    miracle whip, light
  • 1 c
    mayo, low fat
  • 1 1/2 Tbsp
    bold & spicy mustard
  • 1
    roasted red bell, chopped (or pimento)
  • 1 tsp
    black pepper

How to Make Potato Salad


  1. Boil the potatoes till tender, & drain. Boil the eggs, cool & peel. Mash the potatoes adding a very small amount of milk. Chop the eggs and red bell.
  2. In a large bowl mix together all ingredients together. Refrigerate. (Add more miracle whip or mayo if desired).
