Ingredients
- 6-8 medium russet potatoes, skinned, cubed & boiled
- 1/4 cup diced onion
- 4 - eggs, boiled, peeled, & chopped
- 2 tablespoons sweet pickle relish
- 1 cup miracle whip, light
- 1 cup mayo, low fat
- 1 1/2 tablespoons bold & spicy mustard
- 1 - roasted red bell, chopped (or pimento)
- 1 teaspoon black pepper
How To Make potato salad

Step 1Boil the potatoes till tender, & drain. Boil the eggs, cool & peel. Mash the potatoes adding a very small amount of milk. Chop the eggs and red bell.

Step 2In a large bowl mix together all ingredients together. Refrigerate. (Add more miracle whip or mayo if desired).
