here is yet another potato salad recipe for a crowd. My Grandma Robinson used to love to make potato salad, or scalloped corn any time the family had a get together. Of course, she never wrote the recipes down, but I figured them out by watching her through the years. She would be proud I think of her every time I see either on the table!

Ingredients

  • - 30 lb. potatoes, diced, cooked
  • - 4 dozen hard boiled eggs, chopped
  • - 4 bunches celery, diced
  • - 2 qt. sweet pickle relish
  • - 6 onions, diced
  • - 2 qt. mayonnaise
  • - 2 (6 oz.) jars yellow mustard
  • - 1/2 c. salt
  • - 2 tbsp. white pepper
  • - 10 sm. cans or jar of pimento

How To Make potato salad #4 for 100

  • Step 1
    Combine ingredients. Mix lightly. Chill overnight in refrigerator. Serve as you desire. Garnish with parsley.
