I discovered this recipe about 50 years ago. I get raves on it every time I serve it. It's the best potato salad that I've ever eaten.

Ingredients

  • 5 cups cooked potatoes - cubed (i use the red ones)
  • 3/4 cup mayonnaise - do not use low-fat
  • 1/2 teaspoon celery seed
  • 3/4 teaspoon mustard seed
  • 2 tablespoons red wine vinegar
  • 2 - hard boiled eggs
  • 1/2 cup green onions and tops
  • 2 teaspoons salt

How To Make potato salad

  • Step 1
    Boil potatoes until they're done. Soak celery seed, mustard seed, and mayonnaise in red wine vinegar. Cut potatoes in cubes. Add onions, and eggs. Mix in mayonaisse mixture. Cover and put in refrigerator overnight. It will taste very salty when it's first made. But the potatoes will soak up the salt and the salad will be delicious the next day.
