Ingredients

potatoes, peeled, cubed, cooked
1 small
onion, finely chopped
1 small
bell pepper, finely chopped

hard boiled egggs, diced

mayonnaise
1 Tbsp
yellow mustard
1/4 tsp
black pepper
paprika, optional

How to Make Potato Salad

Step-by-Step

  • 1After cooking allow potatoes to cool.
  • 2Combine potatoes and all ingredients, do not over-mix.
  • 3Refrigerate for several hours ahead of serving time.
  • 4Serve on a bed of lettuce (optional).
  • 5You may choose to sprinkle paprika on your salad or garnish as desired.
