- 4 cups potatoes, peeled, cubed, cooked
- 1 small onion, finely chopped
- 1 small bell pepper, finely chopped
- 2 - hard boiled egggs, diced
- 1 cup mayonnaise
- 1 tablespoon yellow mustard
- 1/4 teaspoon black pepper
- - paprika, optional
How To Make potato salad

Step 1After cooking allow potatoes to cool.

Step 2Combine potatoes and all ingredients, do not over-mix.

Step 3Refrigerate for several hours ahead of serving time.

Step 4Serve on a bed of lettuce (optional).

Step 5You may choose to sprinkle paprika on your salad or garnish as desired.
