Potato Salad

Ingredients

·5-6 medium red potatoes, cooked and cubed

·3-4 hard boiled eggs

·1-2 grated carrots
-
1 cchopped celery (optional)
-
1/2 cchopped onion (optional)

1 cmayonnaise
-
3 Tbspapple cider vinegar
-
1 1/2 tspsalt
-
1/4 tsppepper
-
1 tspsugar
-
1 Tbspdill, dried
-
1 Tbspfrench dressing or dash of cayenne pepper
How to Make Potato Salad
- Clean potatoes with vegetable brush. Do not peel.
Cook potatoes (I often cube the potatoes and then cook them.)
Hard cook the eggs (bring eggs to boil and boil for 20 minutes). Cool by running cold water over them. Peel the shell and chop the eggs. - Grate the carrots and chop onions and celery. Add these vegetables to the potatoes and eggs.
- While potatoes & eggs are cooking, mix the ingredients for the dressing.(mayonnaise, vinegar, salt,pepper,sugar,dill and french dressing or cayenne pepper)
- Add potatoes, eggs and vegetable ingredients to dressing. It is best to add while Potatoes are still warm. Cover and chill.
