I bring this to BBQ's and there is never any left over. People ask me to bring it now!Its easy and delicious. It can be served warm or cold.

Ingredients

  • 5 pounds red skin potato's
  • 1 pound bacon, cooked and crumbled
  • 4 large eggs, hard boiled
  • 1 cup mayonnaise add as much as you like
  • 1 tablespoon whole grain mustard
  • 1 bunch scallions
  • - salt and pepper to taste

How To Make potato & bacon salad

  • Step 1
    Cut potato's in cubes and boil in salted water until fork tender. Drain and put in a large bowl
  • Step 2
    Chop or slice eggs and add to potato's
  • Step 3
    Add Mayonnaise,mustard,salt,pepper and scallions.Stir. Add more or less mayo and mustard according to your liking
  • Step 4
    I stir in the bacon just before serving, to keep it crunchy.It tastes just as good added ahead of time.
  • Step 5
    Can be served warm or chilled.
