party potato salad
I mix the dressing up the day before I make the salad This is my most requested salad for family gatherings. One of my grand daughters, will eat this for breakfast the next day.

Ingredients
- - 4 medium white baking potatoes
- - 4 medium or 2 large yukon gold potatoes
- - 4 red potatoes
- - 4 small or 2 med/large sweet potatoes
- - 1 large spanish onion chopped fine
- - 1 small red onion chopped fine
- - 2 tablespoons sweet pickle relish or to taste “drained very well”
- - 1 tablespoon dill pickle relish or to taste “drained very well”
- - 3 tablespoons bread and butter pickles chopped fin or e to taste “drained very well”
- - 1 lb. bacon chopped & fried till crisp “ reserving grease for another use
- - or 3 stalks celery chopped fine
- - 6 - 8 large hard boiled egg’s chopped fine
- - dressing:
- - these amount are all estimated, if you like it wet add more of these items if you like it more or less sweet adjust the sugar
- - ¾ cup sour cream
- - ¾ cup mayonnaise
- - ¾ cup plain yogurt “ drained “
- - ¾ cup cream cheese
- - ¾ cup goat cheese
- - dry mustard to taste “ about 2 teaspoons “
- - 1/8 teaspoon celery seeds
- - ¼ teaspoon caraway seeds
- - sugar to taste “start with 1 tablespoon” and then go from there
- - paprika for top of salad
How To Make party potato salad

Step 1Bake “not boil” all potatoes in a 400 degrees oven, till tender, cool and peel, cut into bite size pieces

Step 2Hard boil eggs and cut into small pieces

Step 3Cut bacon and fry till crisp

Step 4Add all other ingredients and toss with dressing…add dressing a little at a time till you get as much dressing on it that will suite your family.

Step 5Chill till ready to eat!
