Ingredients
- 4 slices bacon
- 1/2 cup yellow or white onion, chopped
- 1/2 cup green pepper, chopped
- 1/4 cup vinegar
- 1 teaspoon salt (or to taste)
- 1/4 teaspoon pepper
- 1 teaspoon sugar
- 1 - egg, beaten (raw)
- 2-3 pounds potatoes, hot, cooked, cubed - still hot
- 3 - eggs, hardboiled and chopped
- 1/4 cup grated carrot
How To Make pa dutch potato salad (hot)

Step 1Dice bacon and fry. Add green pepper and onion, and cook 3 minutes.

Step 2Add vinegar, sugar, salt, pepper, and a beaten egg. Stir and cook briefly.

Step 3Add cubed potatoes, grated carrot and diced hard-boiled eggs. Gently fold together; serve hot.
