no mayo potato salad
This has been in my family for years. It is a hit when I take it to picnics. You can use any combination of oils or vinegar. I have used olive oil and red wine vinegar. I have an aunt who will put leftover cooked bacon, ham, or pepperoni in this, as well. If you want more dressing, remember to use equal parts oil to vinegar.

It's a refreshing alternative to traditional mayo-based potato salads. Since there is no mayonnaise, refrigeration isn't as much of a concern. We did add bacon bits for a touch of smoky flavor.

Ingredients
- 1/3 cup vegetable oil
- 1/3 cup cider vinegar
- 1 teaspoon granulated sugar
- - salt, to taste
- pepper, to taste
- 5 pounds potatoes
- 1 large sweet onion, thinly sliced
- 1 bunch green onions, chopped
How To Make no mayo potato salad

Step 1In a small bowl whisk together vegetable oil, vinegar, sugar, salt, and pepper. You can also use a glass jar with a lid to mix the dressing. Set this aside so the flavors will marry.

Step 2In a large pot, put the potatoes in water to boil until fork tender. Drain and set aside until they are cool enough to handle. Peel and cube or slice into bite-size pieces.

Step 3Next, thinly slice the onion. You can also use chopped green onions for color (add to suit your preference). A combination of both is fine.

Step 4Place the onions on top of the potatoes and mix. Pour the dressing over the potatoes. Taste to see if more seasoning is necessary.

Step 5Place salad in the refrigerator until ready to serve. Mix well before serving.
