my potato salad

I love potato salad and here is my version.

Ingredients

  • 8 medium red potatoes
  • 1/2 - yellow onion, chopped
  • 4 - hard boiled eggs, chopped
  • 1/2 cup dill pickle relish
  • 2 cups miracle whip, light
  • 1 1/2 tablespoons yellow mustard
  • - sea salt & fresh cracked pepper to taste

How To Make my potato salad

  • Step 1
    I start out rinsing my potatoes, then place them unpeeled in my dutch oven pot and fill with water just to cover all potatoes. Over medium high heat cook the potatoes until a knife goes all the way through the potato about 30 minutes.
  • Step 2
    Next, I empty out the water and let the potatoes cool. While they are cooling I mix up the dressing, onions, relish, miracle whip, and mustard and blend well. I set the dressing in the frig. until needed.
  • Step 3
    When potatoes are cool enough to handle I peel, and I cut into bite size squares. Then I salt & pepper and stir. Then add dressing. Finally add eggs and salt & pepper once more and mix gently. * optional to garnish with paprika
