I LOVE,LOVE, lOVE Horseradish!! I always try to add it to many of my recipes. This one turned out great! Just what the world needs.. another potato salad recipe. LOL I do hope you will try this one My friends say it is very good..so do I! But then I know the cook! LOL The amount of horseradish you use is your choice and for your taste. Nancy. 6/17/13

Ingredients For my"horsey potato salad"

  • 6-8 md
    red potatoes leave the skin on and cook... peel and cut up.
  • 6 md
    hard boiled eggs, peel and cut up
  • 1/2 c
    mayonnaise,... easy do not make it soupy
  • 1/3 c
    horseradish sauce
  • 6 md
    green onions....chopped
  • 4 lg
    celery ribs...string and dice
  • salt, pepper, paprika, and parsley.....add to your taste

How To Make my"horsey potato salad"

    Hard boil your eggs. Drain and set aside to cool. Last week I found this little egg water timer at the Dollar Store! You put it in the water with your eggs to boil. The turn of color will show you when they are done! More info at the bottom.

    Wash the red potatoes, put in a pan of water, cook till done, easy not to soft. Drain, put aside to cool. Then peel and dice potatoes, also the eggs. Add chopped green onions, and chopped celery.

    Make your "HORSEY Sauce". Mix together, mayonnaise, horseradish, salt, pepper, and a little paprika, also chopped parsley.

    Gently fold in with the potatoes and eggs. Cover with saran, and put in the refrigerator. I like to let the flavors meld together overnight. It really improves the flavor. But if you want, it can be served right away.

    Picture of the egg timer, see it turns color. From red to white!...Amazing!!! Directions: Place the egg timer in the bottom of a pan of water-filled pan. While the eggs cook,the timer calculates the rise in temperature, by changing the color of the timer. The progressive change in color shows the levels of completion from soft to hard-boilerd!
