I THINK WHAT I REMEMBER MOST ABOUT THIS POTATO SALAD IS DADDY MIXING UP THE DRESSING IN A JAR. HE NEVER MEASURED ANY OF THE INGREDIENTS. I DON'T EITHER WHEN I MAKE IT. EVERY TIME A COOK-OUT HAPPENS I MAKE THIS AND I FEEL SO HAPPY THINKING AT THE MANY TIMES I WATCHED HIM MAKE IT OVER THE YEARS. HE PASSED AWAY IN 2001 OF LIVER CANCER AND OUR GET TOGETHER'S HAVE NEVER BEEN THE SAME. SOMETHING IS MISSING AND THAT IS MY DADDY.

Ingredients For my daddy's potato salad

  • 2-3 lb
    small red potatoes
  • 1 c
    celery sliced thin
  • 1 sm
    onion, chopped
  • 6
    boiled and peeled eggs
  • 1 1/2 c
    miracle whip (not mayo)
  • 2 tsp
    prepared mustard
  • 2
    good tablespoons of sugar
  • 2-3 tsp
    white vinegar
  • salt & pepper
  • mason jar

How To Make my daddy's potato salad

    BOIL POTATOES IN A LARGE POT OF WATER TILL TENDER. DRAIN AND LET COOL. BOIL 6 EGGS IN A COOKING PAN FOR 10 MINUTES. WHEN DONE, QUICKLY POUR OFF WATER AND RUN UNDER REALLY COLD WATER. PEEL AND SET ASIDE.

    WHILE POTATOES ARE COOLING, SLICE CELERY AND CHOP ONIONS. CUT EGGS INTO MEDIUM SIZE PIECES. CUT COOLED POTATOES AND ADD TO A LARGE BOWL WITH EGG, CELERY, ONION & SALT/PEPPER.

    COMBINE IN A MASON JAR MIRACLE WHIP, MUSTARD, VINEGAR AND SUGAR. SHAKE IT UP AND TASTE. IT SHOULD HAVE A SWEET VINEGAR TASTE. POUR OVER POTATO MIXTURE. BLEND WELL. REFRIGERATE TILL READY TO SERVE.
