Ingredients
- 2 pounds colored baby potatoes. red, yellow and purple cut in half
- salt
- 8 slices bacon
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1/2 cup chicken stock
- 1/4 cup cider vinegar
- fresh chives for garnish
How To Make multicolored baby german potato salad

Step 1Place water in a pan big enough for all the potatoes. Season the water heavily with salt. Alternatively, you can use chicken stock instead of water for extra flavor. Add the potatoes and bring to a boil, and cook the potatoes until fork-tender, about 20 minutes. Drain.

Step 2Cook the bacon in a large pan until brown and crispy. Remove to a paper towel and let cool enough to chop them up. Add back to the pan and add the onion and garlic. Cook about 5 minutes, then add the chicken stock and vinegar.

Step 3Toss the potatoes into the pan and let them absorb the stock and vinegar. Serve garnished with chives.
