Mrs. Euler's Potato Salad

When I was a little girl, our next door neighbor would bring this potato salad to gatherings. She gave this recipe to my Mom and this is the only one I have ever used.

Stove Top


  • 2 1/2 lb
  • 4 Tbsp
    white vinegar
  • 1 c
    sour cream
  • 1 c
  • 1 Tbsp
  • 1/2 tsp
  • 1/2 tsp
    black pepper
  • 1/2 tsp
    dry mustard
  • 1/2 tsp
  • 2
    eggs, hard boiled

How to Make Mrs. Euler's Potato Salad


  1. Peel potatoes and cut into uniform chunks. Boil until fork tender. Pour vinegar over hot potatoes and let stand while you are making the dressing.
  2. Combine all ingredients except the hard boiled eggs and stir until smooth and well mixed. If it seems too thick, thin with a little milk.
  3. Slice potatoes and chop hard boiled eggs. Fold dressing into potato-egg mixture and refrigerate.
