mom's potato salad

I've never had a potato salad exactly like my mom's. The potatoes are shredded instead of diced or cubed and the dressing is sweet and tangy instead of savory. Our summer family gatherings ALWAYS include her potato salad and we all love it! I recommend tasting the dressing before adding it to the potatoes - my mom never measures the ingredients but these measurements are as close as I could get!

Ingredients
- 8-10 medium potatoes - cooked, peeled, shredded & chilled
- 4 - hard-boiled eggs, diced and chilled
- 2 - celery stalks, diced
- 1 small yellow onion, diced finely
- DRESSING
- 2 cups miracle whip
- 3 tablespoons yellow mustard
- 1/2 cup sugar
- 1 teaspoon vinegar
- - salt to taste
- - paprika to garnish
How To Make mom's potato salad

Step 1Cook potatoes and eggs; chill before combining with remaining ingredients.

Step 2Mix dressing ingredients and chill. Taste before adding to potatoes and adjust flavors as desired.

Step 3Dice celery and onion; combine with shredded potatoes and diced eggs.
