This is my dads favorite potato salad. My mom passed away many years ago but I have her recipe and my dad goes crazy over it when I make it for him

Ingredients
- 6 large russet potatoes peeled and small cube
- 1 large onion chopped
- 1 cup pickle slices chopped
- 6 large boiled eggs 4 chopped 1 sliced
- DRESSING
- 2 cups miracle whip
- 2 tablespoons prepared mustard
- 2 teaspoons celery seed
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon apple cider vinegar
- 1 cup sugar
- 1 1/2 cups milk
- 2 teaspoons sweet paprika
- 2 tablespoons fresh parsley for garnish
How To Make mom's creamy potato salad

Step 1boil the potatoes in salted water until soft. About 15 minutes. Place the onion, pickles and chopped egg in a large bowl. Drain the potatoes and rinse with cold water until cooled and add to bowl.

Step 2Mix all the ingredients for the dressing together except paprika and parsley.Whisk until well incorporated.

Step 3Stir the dressing into the potato mixture. Add the sliced boiled egg to top of dish. Sprinkle with paprika and garnish with fresh parsley.
