A few simple ingredients and about 30 minutes and you'll have one of the best side dishes ever. Nothing fancy, just good eating!

Ingredients

  • 6 - russet potatoes
  • 6 slices bacon
  • 6 sprigs green onions, chopped
  • 4 tablespoons butter or oleo
  • - salt & pepper to taste
  • 1 cup diced or grated sharp cheddar cheese

How To Make molly's german potato salad

  • Step 1
    Peel (or not, as desired), cut into chunks and boil potatoes till fork tender. Drain. Save a bit of the drippings.
  • Step 2
    Cut bacon slices into 1" pieces and fry till crisp; drain on paper towels.
  • Step 3
    Add bacon, green onions, cheese and butter to potatoes and mix well. I like to add a bit of the drippings, as well.
  • Step 4
    Season to taste with salt and pepper. Stir well and serve warm.
