How to Make Megan's "Italian" Potato Salad
- Take the southern potato salad, add as many onions as you like, and fresh basil. Mix well. Let sit in the fridge for the flavors to combine.
- Note: I take a red onion (Some call them purple) and add them chopped rather thick since I like them but some people don't. The bigger I chop them, the easier for people to avoid that don't like onion.
- Note: The basil leaves, I pull from the stem, wash, dry on paper towels, then roll lengthwise and slice. then chop the slices into larger sized pieces.
- Note: The southern potato salad is one of the salads without mustard in the mix. We buy them pre packaged in the deli department, but you could make your own. It tastes a little sweet....
