megan's "italian" potato salad
Take a pre made potato salad, and make it with an Italian twist...this is the most amazing salad, so easy to make and take! Picnic time just got so much better!

Ingredients
- 1 package southern potato salad (see note)
- - red onion, diced to desired thickness
- - fresh basil leaves, see notes
How To Make megan's "italian" potato salad

Step 1Take the southern potato salad, add as many onions as you like, and fresh basil. Mix well. Let sit in the fridge for the flavors to combine.

Step 2Note: I take a red onion (Some call them purple) and add them chopped rather thick since I like them but some people don't. The bigger I chop them, the easier for people to avoid that don't like onion.

Step 3Note: The basil leaves, I pull from the stem, wash, dry on paper towels, then roll lengthwise and slice. then chop the slices into larger sized pieces.

Step 4Note: The southern potato salad is one of the salads without mustard in the mix. We buy them pre packaged in the deli department, but you could make your own. It tastes a little sweet....
