I love potato salad. My ex-husband used to make the best. I couldn't copy his, but adapted this one adding lots of veggies. Be free to add or change veggies to what's in season.

We were pleasantly surprised by how much we loved this summer potato salad. When you hear loaded potato, you think bacon and cheese. But in this potato salad, loaded refers to veggies. Broccoli, carrots, and red and green pepper add beautiful color and a crunchy texture. Spicy brown mustard and hot sauce are mixed with the creamy mayonnaise to create a dressing that has a mild kick of flavor. If you like more spice, add more hot sauce. Cool and creamy, this homemade potato salad has the perfect balance of flavor and textures. A nice summer side dish for burgers, steaks, or hot dogs.

Ingredients For loaded potato salad

  • 3 lb
    potatoes, cooked and cubed
  • 1 bunch
    broccoli florets
  • 1 c
    chopped carrots
  • 2-3 stalk
    celery, chopped
  • 1/2
    red pepper, chopped
  • 1/2
    green pepper, chopped
  • 1 md
    onion, chopped
  • 1/4 c
    sweet pickle relish
  • 1-2 c
    mayonnaise dressing
  • 2-3 Tbsp
    hot sauce
  • 3 Tbsp
    mustard, spicy brown
  • salt, pepper, paprika
  • 4
    hard boiled eggs, peeled and chopped

How To Make loaded potato salad

  • Pickle relish, mayo, mustard, hot sauce, and chopped hard-boiled eggs in a bowl.

    Mix together sweet pickle relish, mayo, mustard, hot sauce, and chopped hard-boiled eggs. Set aside.
  • Chopped vegetables added to bowl ready to mix with dressing.

    Stir together chopped vegetables. Add dressing mixture folding in gently. Add salt, pepper, and paprika to taste. Add more mayo if desired to preferred consistency.
  • Loaded Potato Salad sprinkled with paprika.

    Let chill overnight or several hours before serving. Sprinkle with more paprika.
