Ingredients

  • 3 medium
    baked potatoes
  • 1 c
    sour cream
  • 1/2 c
    mayonnaise
  • 1 c
    sharp cheddar cheese, shredded
  • 8 slice
    bacon
  • 1/3 c
    chopped chives
  • ·
    salt and pepper to taste

How to Make Loaded Baked Potato Salad

Step-by-Step

  1. If you do not have leftover baked potatoes then scrub 3 potatoes, dry, pierce with fork and wrap in foil. Bake 45-60 minutes in a 400 degree oven. (or you can nuke them, but not with the foil on) Unwrap and cool in fridge.
  2. Fry bacon till crisp, drain and cool then chop into small bits. Set aside.
  3. Cut baked potatoes into 1 inch cubes.
  4. In large bowl combine cubed potatoes, sour cream, mayo, shredded cheddar, chopped chives, and salt & pepper, and half of the bacon bits. Mix together gently.
  5. Tranfer to serving bowl and top with remaining bacon.
