If you love a loaded potato, you're going to love this potato salad. It's a delicious side dish for a summer cookout. Baking instead of boiling the potatoes adds to the flavor of the potatoes. They're tossed in a sour cream and mayonnaise mixture for a classic creamy and tangy dressing. When mixed with savory and crunchy pieces of bacon, shredded cheese, and chives, you have loaded baked potato flavor in potato salad form.

Ingredients

  • 3 medium baked potatoes, cooked
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded sharp cheddar cheese
  • 8 slices bacon
  • 1/3 cup chopped chives
  • salt and pepper, to taste

How To Make loaded baked potato salad

  • Clean potatoes, bake, and cool.
    Step 1
    If you do not have leftover baked potatoes, then scrub 3 potatoes, dry, pierce with a fork, and wrap in foil. Bake 45 - 60 minutes in a 400-degree oven. Or, you can nuke them, but not with the foil on. Unwrap and cool in the fridge.
  • Fry bacon until crisp.

    Drain and cool. Then chop into small bits. Set aside.
  • Cut cooled baked potatoes into 1-inch cubes.

  • Add cubed potatoes, sour cream, mayo, shredded cheddar, chopped chives, salt, pepper, and half of the bacon bits to a bowl.

  • Mix gently.
