Ingredients
- 3 medium baked potatoes, cooked
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 cup shredded sharp cheddar cheese
- 8 slices bacon
- 1/3 cup chopped chives
- - salt and pepper, to taste
How To Make loaded baked potato salad

Step 1If you do not have leftover baked potatoes, then scrub 3 potatoes, dry, pierce with a fork, and wrap in foil. Bake 45 - 60 minutes in a 400-degree oven. Or, you can nuke them, but not with the foil on. Unwrap and cool in the fridge.

Step 2Fry bacon until crisp.

Step 3Drain and cool. Then chop into small bits. Set aside.

Step 4Cut cooled baked potatoes into 1-inch cubes.

Step 5In a large bowl, combine cubed potatoes, sour cream, mayo, shredded cheddar, chopped chives, salt, pepper, and half of the bacon bits.

Step 6Mix gently.

Step 7Transfer to serving bowl and top with remaining bacon.
