baked potatoes
1 c
sour cream
1/2 c
1 c
sharp cheddar cheese, shredded
8 slice
1/3 c
chopped chives
salt and pepper to taste

How to Make Loaded Baked Potato Salad


  • 1If you do not have leftover baked potatoes then scrub 3 potatoes, dry, pierce with fork and wrap in foil. Bake 45-60 minutes in a 400 degree oven. (or you can nuke them, but not with the foil on) Unwrap and cool in fridge.
  • 2Fry bacon till crisp, drain and cool then chop into small bits. Set aside.
  • 3Cut baked potatoes into 1 inch cubes.
  • 4In large bowl combine cubed potatoes, sour cream, mayo, shredded cheddar, chopped chives, and salt & pepper, and half of the bacon bits. Mix together gently.
  • 5Tranfer to serving bowl and top with remaining bacon.
