My family absolutely loves this. What a way to turn a plain old baked potato into something spectacular! I'm sure your family will love it, too.

Ingredients

  • 3 medium baked potatoes, cooked
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded sharp cheddar cheese
  • 8 slices bacon
  • 1/3 cup chopped chives
  • - salt and pepper, to taste

How To Make loaded baked potato salad

  • Step 1
    If you do not have leftover baked potatoes, then scrub 3 potatoes, dry, pierce with a fork, and wrap in foil. Bake 45 - 60 minutes in a 400-degree oven. Or, you can nuke them, but not with the foil on. Unwrap and cool in the fridge.
  • Step 2
    Fry bacon until crisp.
  • Step 3
    Drain and cool. Then chop into small bits. Set aside.
  • Step 4
    Cut cooled baked potatoes into 1-inch cubes.
  • Step 5
    In a large bowl, combine cubed potatoes, sour cream, mayo, shredded cheddar, chopped chives, salt, pepper, and half of the bacon bits.
  • Step 6
    Mix gently.
  • Step 7
    Transfer to serving bowl and top with remaining bacon.
