My family absolutely loves this . What a way to turn a plain old baked potato into something spectactular ! I'm sure your family will love it , too .

Ingredients

  • 3 medium baked potatoes
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup sharp cheddar cheese, shredded
  • 8 slices bacon
  • 1/3 cup chopped chives
  • - salt and pepper to taste

How To Make loaded baked potato salad

  • Step 1
    If you do not have leftover baked potatoes then scrub 3 potatoes, dry, pierce with fork and wrap in foil. Bake 45-60 minutes in a 400 degree oven. (or you can nuke them, but not with the foil on) Unwrap and cool in fridge.
  • Step 2
    Fry bacon till crisp, drain and cool then chop into small bits. Set aside.
  • Step 3
    Cut baked potatoes into 1 inch cubes.
  • Step 4
    In large bowl combine cubed potatoes, sour cream, mayo, shredded cheddar, chopped chives, and salt & pepper, and half of the bacon bits. Mix together gently.
  • Step 5
    Tranfer to serving bowl and top with remaining bacon.
