Ingredients
- 3 medium baked potatoes
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 cup sharp cheddar cheese, shredded
- 8 slices bacon
- 1/3 cup chopped chives
- - salt and pepper to taste
How To Make loaded baked potato salad

Step 1If you do not have leftover baked potatoes then scrub 3 potatoes, dry, pierce with fork and wrap in foil. Bake 45-60 minutes in a 400 degree oven. (or you can nuke them, but not with the foil on) Unwrap and cool in fridge.

Step 2Fry bacon till crisp, drain and cool then chop into small bits. Set aside.

Step 3Cut baked potatoes into 1 inch cubes.

Step 4In large bowl combine cubed potatoes, sour cream, mayo, shredded cheddar, chopped chives, and salt & pepper, and half of the bacon bits. Mix together gently.

Step 5Tranfer to serving bowl and top with remaining bacon.
