Loaded Baked Potato Salad

4-5 cdiced potatoes
1 cfreshly grated cheddar cheese
1 -1 1/2 cmayonnaise
1 Tbsponion powder
1/2 tspblack pepper
1/2 tspcoarse sea salt
How to Make Loaded Baked Potato Salad
- Peel and dice potatoes/ boil 10-15 minutes until fork tender.Turn off the heat and drain the potatoes. Return the pan back to the burner to help dry out the rest of the water. This is when I add the stick of butter in slices and mix well.
- Add chopped scallions, bacon that has been fried crisp and crumbled, mayo, salt, onion powder and pepper. Mix well and chill 15-20 minutes.
- The last thing I do is add the cheese after it has chilled somewhat so that the cheese doesn't melt. Return to the refrigerator and chill for at least another hour before serving. Enjoy!
- * Optional/ I add a little sugar to mine because that is how my mother cooked. We add a little sugar to everything!
