I love loaded baked potatoes and potato salad so this was my way of combining them. I haven't had anyone try it so far who didn't love it. The measurements here are my best guess. I normally just throw it together. Enjoy!

How to Make Loaded Baked Potato Salad

  • 1Peel and dice potatoes/ boil 10-15 minutes until fork tender.Turn off the heat and drain the potatoes. Return the pan back to the burner to help dry out the rest of the water. This is when I add the stick of butter in slices and mix well.
  • 2Add chopped scallions, bacon that has been fried crisp and crumbled, mayo, salt, onion powder and pepper. Mix well and chill 15-20 minutes.
  • 3The last thing I do is add the cheese after it has chilled somewhat so that the cheese doesn't melt. Return to the refrigerator and chill for at least another hour before serving. Enjoy!
  • 4* Optional/ I add a little sugar to mine because that is how my mother cooked. We add a little sugar to everything!
