I love both potato salad and salmon. This sounded like a winner!

Can't find kippered salmon? Try using smoked salmon just don't use lox (it's cold-cured and not the right consistency).

Ingredients

10 small
new red potatoes, boiled, roughly peeled and sliced

eggs, hard boiled and quartered
1/2 lb
kippered salmon, broken into pieces
watercress or frisee lettuce

DRESSING

1/2 c
sour cream (lite is ok)
1 tsp
grainy mustard
2 Tbsp
fresh lemon juice
1/2 c
chopped fresh dill
1 Tbsp
prepared horseradish
black pepper to taste
