I love both potato salad and salmon. This sounded like a winner! Can't find kippered salmon? Try using smoked salmon just don't use lox (it's cold-cured and not the right consistency).

Ingredients

  • 10 small new red potatoes, boiled, roughly peeled and sliced
  • 4 - eggs, hard boiled and quartered
  • 1/2 pound kippered salmon, broken into pieces
  • - watercress or frisee lettuce
  • DRESSING
  • 1/2 cup sour cream (lite is ok)
  • 1 teaspoon grainy mustard
  • 2 tablespoons fresh lemon juice
  • 1/2 cup chopped fresh dill
  • 1 tablespoon prepared horseradish
  • - black pepper to taste

How To Make kippered salmon and potato salad

    Mix dressing ingredients together.

    Arrange your salad components on a platter and drizzle the dressing over the entire dish, generously covering the potatoes.
