I love both potato salad and salmon. This sounded like a winner! Can't find kippered salmon? Try using smoked salmon just don't use lox (it's cold-cured and not the right consistency).

- 10 small new red potatoes, boiled, roughly peeled and sliced
- 4 - eggs, hard boiled and quartered
- 1/2 pound kippered salmon, broken into pieces
- - watercress or frisee lettuce
- DRESSING
- 1/2 cup sour cream (lite is ok)
- 1 teaspoon grainy mustard
- 2 tablespoons fresh lemon juice
- 1/2 cup chopped fresh dill
- 1 tablespoon prepared horseradish
- - black pepper to taste
