I come from a large family and whenever we have a family get-together Im the one they pick to bring the potato salad and being from the South it is a staple here.

Ingredients

  • 3 pounds white all purpose potatoes peeled and diced
  • 1 medium onion ,diced small
  • 2 sticks celery clean and chopped small
  • 1/4 cup green and red pepper diced
  • 1/2 cup sweet pickle relish
  • 1 small jar of chopped pimento
  • 1 cup hellmans mayannaise (my choice)
  • 1/8 cup yellow mustard
  • 1/4 cup sugar or splenda
  • 1/8 teaspoon black pepper
  • 1 teaspoon salt
  • 2 large hard boiled eggs,chopped

How To Make judy's potato salad

  • Step 1
    Cook potaotes until tender.Add vegetables and pimento and pickles. Add eggs and salt and pepper.
  • Step 2
    Mix mayannaise and mustart and sugar in small bowl with a wisk and pour over the potato mixture. this is good warm or even better cold.
