I just wanted to try making a different version using creamy Italian dressing (homemade by combining mayo and Italian dressing) which is my favorite sandwich condiment! It turned out great!

    potatoes, russets
  • 1
    red bell pepper
  • 1 bunch
    green onions
  • 1/2 c
  • 1/4 c
    italian salad dressing

How to Make Italian Potato Salad


  1. Boil Potatoes until tender, drain and run cold water over and let sit until cool.
  2. Peel and cut into bite size pieces. Sprinkle salt, pepper and vinegar over every two chopped potatoes as you put into bowl.
  3. Add Mayonnaise and Italian Dressing and Stir to incorporate.
  4. Chop Red Bell Pepper and Green Onions and stir into Potatoes.
  5. Taste and adjust seasonings or dressing to taste.
