I just wanted to try making a different version using creamy Italian dressing (homemade by combining mayo and Italian dressing) which is my favorite sandwich condiment! It turned out great!

Ingredients

  • 6-8 - potatoes, russets
  • 1 - red bell pepper
  • 1 bunch green onions
  • 1/2 cup mayonnaise
  • 1/4 cup italian salad dressing
  • - salt
  • - pepper
  • - vinegar

How To Make italian potato salad

  • Step 1
    Boil Potatoes until tender, drain and run cold water over and let sit until cool.
  • Step 2
    Peel and cut into bite size pieces. Sprinkle salt, pepper and vinegar over every two chopped potatoes as you put into bowl.
  • Step 3
    Add Mayonnaise and Italian Dressing and Stir to incorporate.
  • Step 4
    Chop Red Bell Pepper and Green Onions and stir into Potatoes.
  • Step 5
    Taste and adjust seasonings or dressing to taste.
