This is my most requested summer side dish.it's ideal for outdoor occasions and can be served warm or cold.

Ingredients

  • 3 lb - small red potatoes,halved
  • 2 tbsp - olive oil
  • 1/2 tsp - salt / 1/4-tsp pepper
  • 1 lag - sweet yellow pepper,chopped
  • 1 med - red onion,halved,sliced
  • 1 med - cuccumber,chopped
  • 1 1/4 cups - grape tomatoes,halved
  • 1/2 lb - mozzarella cheese.cubed
  • 3/4 cup - greek vinaigrette
  • 1/2 cup - kalamata (greek) olives
  • 1 can - 2- 1/4 oz sliced ripe olives,drained
  • 2 tbsp - minced fresh oregano

How To Make grilled greek potato salad

  • Step 1
    DRIZZLE POTATOES WITH OIL AND SPRINKLE WITH SALT AND PEPPER;TOSS TO COAT.GRILL POTATOES,COVERED,OVER MED HEAT FOR 20-25 MIN OR UNTIL TENDER.
  • Step 2
    PLACE IN A LARGE BOWL.ADD THE REMAINING INGREDIENTS;TOSS TO COAT. SERVE SALAD WARM OR COLD.
