green onion potato salad

My mother used to make a great potato salad and she would sneak jalapenos into it sometimes. When I was a kid I didn't care for jalapenos but love them now. I changed only the amount of peppers to this recipe. 2 seems just right for my family but depending on your taste for "hot" you can add more or less.

Ingredients
- 2 pounds new red potatoes
- 1 tablespoon plus 2 tsp kosher salt divided
- 1 1/4 cups real mayonnaise
- 2 tablespoons white wine vinegar
- 1 or 2 medium jalapeno peppers chopped
- 2 teaspoons salt
- 1/4 teaspoon ground black pepper
- 6 medium green onions, thinly sliced
- 1/4 cup fresh cilantro (or parsley) chopped (i use cilantro)
How To Make green onion potato salad

Step 1Cook potatoes with 1 TBSP salt until tender; drain and cool slightly. Slice. Combine mayonnaise, vinegar, jalapeno peppers, salt and black pepper in large bowl. Stir in remaining ingredients and toss gently.

Step 2You can serve this warm or cold. We like it cold.
