Ingredients

  • - 1 1/2 pounds red potatoes, cubed
  • - 1/2 cup feta cheese, crumbled
  • - 1/3 cup fresh lemon juice
  • - 1/4 cup olive oil
  • - 2 tablespoons plain yogurt
  • - 1 teaspoon sugar
  • - salt and pepper to taste
  • - 1 cup cherry tomatoes, halved
  • - 1 cup cucumber, seeded, diced
  • - 1/2 cup pitted kalamata olives, sliced
  • - 1/4 cup red onion, diced
  • - 1 tablespoon chopped fresh oregano
  • - store-bought feta vinaigrette

How To Make greek potato salad

  • Step 1
    boil potatoes in salted water to cover until tender, 12 to 15 minutes. Drain. Mix tomatoes, cucumber, olives, onion, and oregano. Add potatoes and vinaigrette.
