This is a recipe my mom made my entire life. She's 93 now and I wanted to let everyone know how good it is. I take to parties, get together s, and such and never bring any home. I hope if you try it you'll like it to.

Ingredients

  • 3 or 4 pounds potatoes, russets
  • 1/2 cup onion chopped
  • 1 stalk celery chopped
  • 3 large hard boiled eggs
  • 3/4 cup mayonnaise dressing
  • 1/2 cup french onion dip
  • 2 tablespoons yellow mustard
  • 1 teaspoon sugar
  • 1 teaspoon salt for boiling potaoes
  • 1/2 pound bacon chopped and fried crisp

How To Make grandma mcguire's potato salad.

  • Step 1
    Peel and slice your potatoes in pot your going to boil them in. Add salt. Make sure you keep potatoes under water or they will turn black. I slice my potatoes with a mandolin. If you like your potatoes to stay firm add a teaspoon of vinegar to the water you boil in and they will stay firm. Learned that from Chef Emiril Lagasse. boil for 7 minutes and drain.
  • Step 2
    While the potatoes are cooling in the colander do this. Dice your onion, celery. Cut up your bacon into little pieces and fry until crisp. (DO NOT Drain Fat)..
  • Step 3
    Put your potatoes in a large bowl. Put the bacon and grease on top of the potatoes, add celery and onion,,,,mix together lightly. Add Mayonnaise stir, add French onion dip, stir, add sugar, stir, add mustard stir. slice hard boiled eggs over top, cover bowl and put in refrigerator over night. Next day enjoy.
