Just tried this out on the fam - they think it's the best. The gold potatoes really add a rich flavor. Yummy!

Ingredients

  • 12 - small yukon gold potatoes
  • 2 - celery stalks chopped
  • 1/2 cup red onion chopped
  • 1 - handful dill pickle chips chopped
  • 1/2 cup mayo
  • 1 tablespoon mustard
  • 2 - hard boiled eggs chopped
  • - salt and pepper to taste

How To Make gold potato salad

  • Step 1
    Boil potatoes and eggs (in separate pots). Let cool 15 min. Cut potatoes into pieces. Place into medium bowl with lid. Let cool in fridge.
  • Step 2
    Meanwhile, chop onion, celery, and pickles. Peel eggs and chop into small pieces.
  • Step 3
    Place all ingredients into bowl with potatoes, and mix well. Refrigerate 30 min. or so. Enjoy!
