Just tried this out on the fam - they think it's the best. The gold potatoes really add a rich flavor. Yummy!

    small yukon gold potatoes
  • 2
    celery stalks chopped
  • 1/2 c
    red onion chopped
  • 1
    handful dill pickle chips chopped
  • 1/2 c
  • 1 Tbsp
  • 2
    hard boiled eggs chopped
  • ·
    salt and pepper to taste

How to Make Gold Potato Salad


  1. Boil potatoes and eggs (in separate pots). Let cool 15 min. Cut potatoes into pieces. Place into medium bowl with lid. Let cool in fridge.
  2. Meanwhile, chop onion, celery, and pickles. Peel eggs and chop into small pieces.
  3. Place all ingredients into bowl with potatoes, and mix well. Refrigerate 30 min. or so. Enjoy!
