german potato salad (kartoffelsalat)

I adopted this recipe-but haven't made it yet-will change this when I do.

Ingredients

  • 4 - potatoes
  • pinch salt
  • 1 - onion, minced
  • 1 - dill pickle, diced
  • 1/2 teaspoon capers, drained and rinsed
  • 1/2 cup chicken stock, light
  • 1 tablespoon vegetable oil
  • 2 teaspoons mustard, spicy brown
  • 1 tablespoon vinegar
  • pinch pepper

How To Make german potato salad (kartoffelsalat)

  • Step 1
    Cook the potatoes in their jackets in lightly salted water; when the potatoes are cooked and cool enough to handle, peel and slice them, and drop them into a bowl.
  • Step 2
    In a small bowl, whisk the remaining ingredients; taste, and adjust seasonings.
  • Step 3
    Pour dressing over the potatoes, and marinate for 30 minutes before serving the salad.
  • Step 4
    Serve warm or cold.
  • Step 5
    NOTE: May use lemon juice in place of vinegar.
