    onion, minced
  • 1
    dill pickle, diced
  • 1/2 tsp
    capers, drained and rinsed
  • 1/2 c
    chicken stock, light
  • 1 Tbsp
    vegetable oil
  • 2 tsp
    mustard, spicy brown
  • 1 Tbsp
  • pinch

How to Make German Potato Salad (Kartoffelsalat)


  1. Cook the potatoes in their jackets in lightly salted water; when the potatoes are cooked and cool enough to handle, peel and slice them, and drop them into a bowl.
  2. In a small bowl, whisk the remaining ingredients; taste, and adjust seasonings.
  3. Pour dressing over the potatoes, and marinate for 30 minutes before serving the salad.
  4. Serve warm or cold.
  5. NOTE: May use lemon juice in place of vinegar.
