german potato salad (kartoffelsalat)
I adopted this recipe-but haven't made it yet-will change this when I do.

Ingredients
- 4 - potatoes
- pinch salt
- 1 - onion, minced
- 1 - dill pickle, diced
- 1/2 teaspoon capers, drained and rinsed
- 1/2 cup chicken stock, light
- 1 tablespoon vegetable oil
- 2 teaspoons mustard, spicy brown
- 1 tablespoon vinegar
- pinch pepper
How To Make german potato salad (kartoffelsalat)

Step 1Cook the potatoes in their jackets in lightly salted water; when the potatoes are cooked and cool enough to handle, peel and slice them, and drop them into a bowl.

Step 2In a small bowl, whisk the remaining ingredients; taste, and adjust seasonings.

Step 3Pour dressing over the potatoes, and marinate for 30 minutes before serving the salad.

Step 4Serve warm or cold.

Step 5NOTE: May use lemon juice in place of vinegar.
