Ingredients

  • 1 lb
    red potatoes
  • 3 c
    yellow fin tuna, grilled and cut into 1 inch pieces
  • 4
    celery stalks, chopped
  • 1 c
    yogurt, plain and non-fat
  • 1/4 c
    fresh parsley, chopped
  • 2 Tbsp
    red wine
  • 1/2 tsp
    salt
  • 1/2 tsp
    ground cumin
  • 1/4 tsp
    pepper

How to Make Fresh Tuna & Red Potato Salad

Step-by-Step

  1. Heat 1-Inch water (salted if desired) to boiling in a 2-quart saucepan.
  2. Add the potatoes and cover.
  3. Heat until boiling then reduce the heat until simmering and simmer the potatoes 30 to 35 minutes or until they are tender, then drain and cool slightly.
  4. Cut into cubes, (There should be about 3 cups).
  5. Mix all of the ingredients together then cover and refrigerate about 1 hour or until well chilled.
