1Add 1 teaspoon salt to potato water and cook till potatoes are tender. When cool remove potato skins and slice into thin rounds.
2Sprinkle potatoe slices with all of the seasoned rice vinegar. Season with lemon pepper and toss gently. Adjust vinegar and lemon pepper to taste. I like plenty!
3Add cilantro, purple onion and sliced black olives. Toss gently. Add the sour cream till desired moistness is obtained. Garnish with sprigs of cilantro and rings of purple onion. Chill if possible before serving. Bask in the compliments!
