easy potato salad
This was made for the picky members of my family who don't like relish or celery in potato salad.

Ingredients
- 3 pounds peel potatoes, diced in 1 inch chunks
- 2 tablespoons salt
- 1 teaspoon powdered garlic
- 6 - hard boiled eggs
- 1 cup mayonnaise
- 1/2 cup sour cream
- 2 tablespoons white vinegar
- 2 tablespoons yellow mustard
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 - onion, diced finely
How To Make easy potato salad

Step 1Boil potatoes with salt and powdered garlic in the water until well done. drain until dry. It will be fine in the strainer until needed.

Step 2Peel eggs and dice 4 of them up and only quarter the last 2 for the garnish. Can be done beforehand.

Step 3In a small bowl, mix mayo, mustard, sour cream, vinegar, salt and pepper and onion. refrigerate, until needed. You can add the eggs if you desire.

Step 4In a large bowl mix, potatoes, eggs and dressing together until well mixed. Put in to a nice serving bowl and garnish with quartered eggs and sprinkle with cayanne pepper. Chill and enjoy!!
