This is a salad a former co-worker made for our United Way Cook-Off and I really enjoyed it. Hope you will also.

Ingredients

  • 8 - 9 medium
    red potatoes (cooked, peeled, and sliced)
  • 1 - 2 slice
    red onion
  • 1 small
    carton small curd cottage cheese
  • 1 pt
    mayonnaise (do not substitute)

How to Make Easy Potato Salad

Step-by-Step

  1. Alternate layers of potatoes and onion.

    Mix together cottage cheese and mayonnaise. Pour on top of potatoes and onions. Refrigerate (covered) overnight. DO NOT MIX. Toss in the morning and then once again before serving. ENJOY!
