cucumber potato salad
This is a little different taste for potato salad, as I usually make the standard southern potato salad with mustard in the dressing. The cucumber dressing gives a different taste, which my family enjoyed.

Ingredients
- 6 medium red potatoes
- 4 - celery ribs, chopped
- 2 - stalks of green onions, chopped
- 2 teaspoons dill weed
- 2 - hard boiled eggs, chopped
- 1/4 cup sweet pickle relish
- 1/2 cup cucumber ranch salad dressing
- 1/2 cup mayonnaise
How To Make cucumber potato salad

Step 1Place potatoes in a large kettle and cover with water. Bring to a boil, reduce heat; cover and simmer for 20 minutes or until tender. Drain and cool and cut into small cubes.

Step 2In a large mixing bowl combine the eggs, celery, onions, dill weed, salt, pickle relish, mayonnaise and ranch dressing until blended.

Step 3Combine the cucumber salad dressing and the mayonnaise and pour over potato mixture and stir gently to coat. Cover and refrigerate at least 6 hours (overnight is better) before serving.
