This is something I threw together for Memorial Day. My husband, not a fan of potato salad at all, LOVED this. I hope you will also enjoy it!

Ingredients

  • 7 large yukon gold potatoes
  • - refrigerated bacon pieces
  • 1/2 cup sour cream, lite
  • 1/2 cup mayonaise
  • - green onion
  • - shredded cheddar cheese

How To Make chris' loaded baked potato salad

  • Step 1
    Bring salted water to boil; peel and cube potatoes while boiling.
  • Step 2
    Chill 3 to 24 hours
  • Step 3
    Add bacon pieces and cheddar cheese to taste
  • Step 4
    Mix mayonnaise and sour cream then mix into potatoes, bacon, and cheese
  • Step 5
    Garnish with thinly sliced green onions
