Callaloo is a name for a leafy plant and a dish popular in the West Indies. It has West African roots. In the Bahamas, it is served like this. (If you have amaranth leaves available, use them - in the midwestern US, I use spinach!)

Ingredients

  • 1 pound callaloo or fresh spinach
  • 6 small potatoes, boiled, peeled,and sliced
  • 6 slices cheese (of your choice)
  • 1/2 cup mayonnaise
  • 1 - squeeze of lime juice

How To Make callaloo salad

  • Step 1
    Plunge callaloo or spinach in boiling water for 3 minutes. Drain and chop.
  • Step 2
    Mix with cold sliced potatoes and cheese.
  • Step 3
    Dress with mayonnaise/lime juice mixture.
