Callaloo is a name for a leafy plant and a dish popular in the West Indies. It has West African roots. In the Bahamas, it is served like this. (If you have amaranth leaves available, use them - in the midwestern US, I use spinach!)

Ingredients
- 1 pound callaloo or fresh spinach
- 6 small potatoes, boiled, peeled,and sliced
- 6 slices cheese (of your choice)
- 1/2 cup mayonnaise
- 1 - squeeze of lime juice
How To Make callaloo salad

Step 1Plunge callaloo or spinach in boiling water for 3 minutes. Drain and chop.

Step 2Mix with cold sliced potatoes and cheese.

Step 3Dress with mayonnaise/lime juice mixture.
