Callaloo is a name for a leafy plant and a dish popular in the West Indies. It has West African roots. In the Bahamas, it is served like this. (If you have amaranth leaves available, use them - in the midwestern US, I use spinach!)

Ingredients

1 lb
callaloo or fresh spinach
6 small
potatoes, boiled, peeled,and sliced
6 slice
cheese (of your choice)
1/2 c
mayonnaise
1
squeeze of lime juice

How to Make Callaloo Salad

Step-by-Step

  • 1Plunge callaloo or spinach in boiling water for 3 minutes. Drain and chop.
  • 2Mix with cold sliced potatoes and cheese.
  • 3Dress with mayonnaise/lime juice mixture.
