Ingredients
- 1 pound potatoes, unpeeled and diced
- 1/3 cup cider vinegar
- 2 tablespoons vegetable oil
- 2 tablespoons water
- 2 teaspoons pepper
- 1 cup red apples, tart, diced
- 1 pound polish sausage, sliced 1/2 inch thick
- 10 ounces sauerkraut, rinsed and squeezed dry
- 1/4 cup green onions, sliced
- 1/4 cup parsley, chopped
How To Make black forest potato salad

Step 1In 2-quart saucepan over medium heat, cook potatoes, covered, in 2 inches boiling water until tender, about 12 minutes; drain.

Step 2Meanwhile, in large bowl whisk together vinegar, oil, water and pepper.

Step 3Mix in apples.

Step 4In large nonstick skillet over medium heat, toss and brown sausage 10 minutes. Remove with slotted spoon. Drain on paper towels.

Step 5Add potatoes, sauerkraut, onions, parsley and sausage to apple mixture; toss gently. Season with salt.
