I love warm German Potato Salad and this recipe is the best I ever found. I make it often and I get raves about it.

  • 3 c
    diced potatoes
  • 4 slice
    bacon, cooked and diced into bite sized pieces
  • 1
    small onion, diced
  • 1/4 c
    white vinegar
  • 2 Tbsp
  • 3 Tbsp
    white sugar
  • 1 tsp
  • 1/2 tsp
    ground pepper
  • 1 Tbsp
    chopped parsley, if desired

How to Make Authentic German Potato Salad


  1. While potatoes are cooking, fry bacon pieces until crisp. Remove from pan, set aside.
  2. Add diced onion to the bacon fat and cook over medium heat until onion is browned. Add vinegar, water, sugar, salt and pepper. Bring mixture to a boil then add potatoes and 1/2 the bacon pieces. Heat through then transfer to a serving dish, top with remaining bacon pieces. Sprinkle with parsley, if using. Serve warm.
