Ingredients
- 1/2 pound bow tie pasta
- 2 - med size zucchini
- 1/2 jar sun dried tomatoes in olive oil
- 1/2 cup fresh lemon juice
- 1 teaspoon lemon zest, grated
- 1/2 teaspoon garlic salt
- 1/2 teaspoon salt
- 1/2 teaspoon fresh ground pepper
- 1/2 cup olive oil
- 4 - basil, fresh leaves
How To Make zucchini bow tie salad

Step 1Slice your zucchini skin on and place in bowl with tablespoon of olive oil, salt and pepper to taste then mix.

Step 2Place on a cookie sheet and put into 350 degree oven for 15 minutes. Until soft and remove from oven.

Step 3Cook pasta according to directions and drain.

Step 4Add zucchini to pasta and mix gently.

Step 5Open jar of sundried tomatoes and cut 1/2 the jar of tomatoes in half and add to the pasta. Pour about 1/4 of oil from jar into pasta.

Step 6Add garlic salt,salt and pepper. Also add lemon zest and lemon juice and mix. Garnish with basil leaves. Refrigerate and Enjoy!
