This salad is just awesome served while the noodles are still warm, but the next day after salad has chilled in refrigerator it's simply to die for! Be careful this salad is addicting!

Ingredients

  • 12 - slices bacon
  • 20 ounces cheese-filled tortellini
  • 2 - heads fresh broccoli, cut into small florets
  • 1 - head of cauliflower, cut into small florets
  • 1 cup seedless grapes cut in half
  • 1 - red onion, finely chopped
  • 1 cup raisins
  • 1 cup salted sunflower seeds or walnuts
  • 3/4 cup mayonnaise
  • 3/4 cup white sugar
  • 3 teaspoons apple cider vinegar

How To Make totally tubular tortellini salad

  • Step 1
    Chop veggies, grapes, and nuts.
  • Step 2
    Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Step 3
    In a small bowl, mix together mayonnaise, sugar and vinegar to make the dressing.
  • Step 4
    Bring a large pot of lightly salted water to a boil. Cook tortellini in boiling water until they float to the top (or if you like them more tender)you can cook them for a 1-2 minutes longer. Drain the noodles.
  • Step 5
    In a large bowl, combine tortellini, broccoli, bacon, grapes, raisins, sunflower seeds and red onion.
  • Step 6
    Pour dressing over salad, and toss.
