A dear friend at church brought this salad to one of our potlucks and it was a favorite of all! ENJOY!

Ingredients

  • 2 packages tortellini from the refrigerated section; 1 three cheese and 1 garlic cheese
  • 1 - rotisserie chicken cut into bite-sized pieces
  • 1 - container grape tomatoes, cut into half
  • 1 - head of broccoli florets
  • 1 package sliced mushrooms
  • 1 - medium sized can of black olives, drained and sliced
  • 1 jar marinated artichoke hearts, cut up into small pieces
  • 1 bottle good seasons romano basil vinegarette salad dressing or robusto italian

How To Make tortellini salad with rotisserie chicken

  • Step 1
    The broccoli will absorb the dressing better if steamed or blanched. Mix all ingredients together; add broccoli next to last; just before adding tortellini. Add dressing; I use the entire bottle of dressing. We like the Robusto Italian but it is whatever you prefer. This salad can really be made with whatever vegetable you prefer. I have even used canned chicken or you can use chicken breasts. I do not like raw mushrooms so I omit them. It makes a huge bowl and the longer it sits, the better the flavor is. Refrigerate for at least three hours before serving. DELISH!!
