tomatoe and bacon macaroni salad

I just made this up today out of things I had around the kitchen and thought it tasted pretty good. I wanted to share it with you. Im always trying to come up with something a little more exciting than the standard macaroni salad. I hope you like this

Ingredients

  • 1 pound wheel macaroni cooked or any other shape your heart desires
  • 1 bunch green onions chopped (use all of the onions except an inch or two off the tops
  • 1 cup sundried tomatoes (not in oil) sliced and soaked in hot water for 10 minutes
  • 2 - fresh tomatoes diced
  • 3 - celery stalks dice small
  • 1 pound smoked bacon cooked and crumbled
  • 2 cups mayo (not miracle whip)
  • 1 1/2 teaspoons fresh ground black pepper
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar

How To Make tomatoe and bacon macaroni salad

  • Step 1
    In a large bowl mix together macaroni, green onions, sundried and fresh tomatoes, celery, and smoked bacon.
  • Step 2
    combine mayo, pepper, vinegar, and sugar in another bowl. (you can add some salt to taste if you wish)
  • Step 3
    Mix the mayo mixture into the macaroni and chill for several hours.
  • Step 4
    Add a little more mayo if the salad appears dry before serving.
