Ingredients
- 1 package (10-16 ounces) salad ready fresh spinach
- 2 - hard boiled eggs, chopped
- 1 - (2 ounce) can sliced black olives
- 1/4 cup thinly sliced red onion
- 1 cup shredded mozzarella cheese
- 1 can cannellini beans, rinsed and drained
- SWEET ITALIAN DRESSING:
- 1/3 cup sugar
- 1 - envelope dry italian salad dressing mix
- 3 cloves garlic, minced
- 3/4 cup apple cider vinegar
- 3/4 cup water
- 3/4 cup olive oil

Step 1Toss together all salad ingredients. Set aside

Step 2To make salad dressing: In a small bowl, combine the sugar, salad dressing mix, garlic, vinegar and water; gradually whisk in oil.

Step 3Pour desired amount over salad greens mixture and toss. Serve cold. Store remaining dressing in refrigerator. Dressing keeps for at least 4-6 weeks.
