I had to take a Spanish class in college, and at the end of the quarter we had a carry-in, supposed to ethnic, well this is my version of american-ethnic, and everyone loved it!!!

Ingredients

  • 1 lb
    box of pasta (your choice)
  • 1 medium
    tomato, finely chopped
  • 1 bunch
    green onion, finely chopped
  • 1 small
    can chopped black olives
  • 1 can(s)
    black beans
  • 1 pkg
    cheddar cheese, shredded
  • 1 c
    sour cream
  • 1 pkg
    ranch style dressing mix
  • 1 tsp
    cumin
  • 2 c
    chopped cooked chicken breast

How to Make Southwest pasta salad w/chicken

Step-by-Step

  1. Start by boiling pasta until desired doneness. While the pasta is boiling, start chopping tomatoe and onion.
  2. Drain pasta, in a large bowl, mix sour cream and dressind mix, after combined well, fold in all other ingredients. Best if made day before.
