My husband asked for a non-traditional pasta Salad over Memorial Day Weekend and this is was I came up with. Simple and very tasty.

Ingredients For southwest chipotle pasta salad

  • 1 pkg
    multicolor spiral noodles
  • 1 can
    drained chick peas
  • 1 can
    2.25 oz. sliced black olives
  • 1
    red bell pepper, chopped
  • 1 sm
    onion
  • 1 md
    broccoli crown cut up small (about 1 1/2 cups)
  • 1/4 lb
    sliced pepperoni
  • 1 c
    salomi bite sizes
  • 2 c
    provolone cheese, thick sliced and cut into bite sizes
  • 1 c
    shredded pepperjack cheese
  • 1 1/2 c
    sliced cherry or grape tomatoes
  • 2 c
    hidden valley southwest chipotle salad dressing

How To Make southwest chipotle pasta salad

    Cook the pasta noodles, drain.

    In a large bowl add your cooked pasta, veggies, meats, and cheese. Pur salad dressing over and mix well. Cover and refrigerate for at least one hour before serving.

    Note: You can add any type of veggies to this and even any type of beans like black beans. I used what I had on hand.
