southwest chipotle pasta salad

My husband asked for a non-traditional pasta Salad over Memorial Day Weekend and this is was I came up with. Simple and very tasty.

Ingredients

  • 1 package multicolor spiral noodles
  • 1 can drained chick peas
  • 1 can 2.25 oz. sliced black olives
  • 1 - red bell pepper, chopped
  • 1 small onion
  • 1 medium broccoli crown cut up small (about 1 1/2 cups)
  • 1/4 pound sliced pepperoni
  • 1 cup salomi bite sizes
  • 2 cups provolone cheese, thick sliced and cut into bite sizes
  • 1 cup shredded pepperjack cheese
  • 1 1/2 cups sliced cherry or grape tomatoes
  • 2 cups hidden valley southwest chipotle salad dressing

How To Make southwest chipotle pasta salad

  • Step 1
    Cook the pasta noodles, drain.
  • Step 2
    In a large bowl add your cooked pasta, veggies, meats, and cheese. Pur salad dressing over and mix well. Cover and refrigerate for at least one hour before serving.
  • Step 3
    Note: You can add any type of veggies to this and even any type of beans like black beans. I used what I had on hand.
